Choosing the right countertop fryer

Single tank or twin

A single tank is the simplest answer if you fry one thing. A twin tank earns its space the moment your menu has two, because you can keep flavours apart and keep anything containing gluten or fish away from everything else, which matters for allergen control rather than just for taste. A twin also lets you take one tank down for cleaning and keep serving from the other.

Tank size and covers

Our range runs from single 8 litre tanks up to twin 12 plus 12 litre configurations. As a rule of thumb, an 8 litre tank suits a cafe or bar adding fries and a few fried items; 12 litres suits a steady lunch service; twin tanks suit a menu where frying is a main event rather than a side. Oil volume also affects recovery time, so a larger tank holds temperature better when a full basket goes in.

Single phase or three phase

This is the detail that catches people out. Single phase models run from a standard commercial supply and cover most small sites. Three phase models recover oil temperature faster under sustained load, but they need a three phase supply already in place. Check your board before you choose, and tell us what you have when you request your quote so we specify a unit your kitchen can actually run.

Bench space and extraction

Measure the worktop, then allow clearance behind and above for heat and for lifting baskets. A countertop fryer still produces steam and grease-laden vapour, so it needs to sit under or beside extraction in the same way a freestanding fryer does. Position it away from anything that cannot take splashes, and keep a clear route for draining oil.
