What is a bain marie?

A bain marie holds prepared food at a safe hot-holding temperature using gentle, even heat, so dishes stay ready to serve throughout service. There are two main types. A wet bain marie surrounds gastronorm pans with hot water, giving gentle, moist heat that suits sauces, gravies, vegetables and delicate dishes. A dry bain marie uses heated air or elements without water, which is quicker to set up and well suited to items that do not need moisture. Countertop bain maries sit on a worktop for smaller service, while larger freestanding units handle higher volumes.

Wet versus dry: which should you choose?

The right choice comes down to what you are serving. Wet bain maries are the go-to for sauces, gravies, curries, vegetables and anything that benefits from gentle, moist heat, because the water bath prevents hot spots and stops food drying at the edges. Dry bain maries heat up quickly, are simpler to fill and clean at the end of service, and suit items that do not need added moisture, such as certain pre-portioned dishes. Sizing and setup

Bain maries are sized around gastronorm (GN) pans, so capacity is usually described by how many standard pans a unit holds and in what arrangement. A small countertop model might take one or two pans for a compact counter, while a freestanding unit can hold several across a full serving line. Think about your peak covers, the number of dishes you hold at once and the space and power available behind the counter. We will match a unit to your service and install it ready to use.
