How many potatoes do you actually need per hour?
Size a commercial baked potato oven by starting with covers, not with the oven. Take your busiest hour. How many customers pass through, and what share will realistically take a jacket? On a pub carvery adding potatoes as a side, perhaps one in four. In a takeaway where the potato is the main event, most of the queue.
Now split that figure. Some can be baked to order across the hour. The rest has to be hot and waiting when the doors open, because a jacket takes a long bake and nobody queues that long. That second number is your holding requirement, and the one people forget.

Bake-and-display or bake-only
A bake-and-display oven puts a lit, glass-fronted cabinet in front of the customer. The potatoes are visible, hot and obviously ready, which drives impulse buying as a menu board never does. That is why they do well on convenience-store hot counters and in pubs where food competes with the bar.
A bake-only oven does production and nothing else, living behind the pass and feeding a servery or a plated menu. Plenty of sites run both, and on a Rental+ plan kit can be added as the business changes.
Counter footprint and queue flow
The oven wants to sit within arm’s reach of whoever is serving, on the same side of the counter as the till, so one person can take payment and plate without turning away from the queue. Put it at the far end of the run and you have built a bottleneck into lunch service.
Depth catches people out more often than width. Check the door swing as well as the body, and leave clearance for airflow. In a pub or bar the oven usually goes on the food pass; in a convenience store, in the hot-food-to-go run beside the heated display.
Why a standard oven turns a jacket potato leathery
Because a convection oven is doing its job. It drives moisture off with dry, hot air, which is what you want for a roast and exactly what you do not want for a potato that needs a long bake and then has to wait.
Hold a baked potato in a dry oven and the skin keeps drying. It goes tough, then leathery. Fresh out of the oven it is fine; held in dry heat it is not. A dedicated jacket potato oven bakes at one temperature and holds at a lower one, so the skin stays crisp rather than hard.

Most compact King Edward potato ovens run from a standard single-phase supply, which is why they suit sites with no scope for new cabling. Larger bake-and-display models draw more and may want a dedicated circuit. The rating is on each listing above; have your electrician confirm it against the supply before delivery day. Level the bench: a tilted oven bakes unevenly.
