Choosing the right hot cupboard
Start with the top. A plain-top hot cupboard gives you extra counter or plating space above the warming cabinet. A bain-marie top adds serving wells, so one unit holds plates below and serves wet dishes above.
Then think movement. Static cupboards live under a servery line; mobile units on castors move plated food from kitchen to hall, which suits schools, events and contract catering. Check capacity against your busiest sitting, in plates or gastronorm containers, and make sure the cupboard fits the servery gap with room to open doors in service.

A hot cupboard is the servery workhorse: it warms plates and keeps batched food hot where you serve. A hot holding cabinet is a taller, often gastronorm-racked cabinet built for holding larger volumes at precisely controlled temperature, typically back of house. What temperature does a hot cupboard hold food at?
Hot cupboards are designed to hold cooked food above the generally accepted safe hot-holding temperature of 63 degrees Celsius until it is served. Commercial units hold that temperature consistently through service, and every unit we rent is maintained under the plan so performance stays within specification.
What size hot cupboard do I need?
Size to your plate count at the busiest sitting. Compact units suit cafes and small kitchens warming plates and holding small batches, while larger cupboards and cook and hold ovens handle school, event and contract catering volumes. Mobile models on castors are worth considering where food moves between kitchen and servery.
Should I choose a plain top or a bain-marie top?
Choose a plain worktop when the cupboard doubles as counter space or a plating station. Choose a bain-marie top when you also serve from above, with wells keeping sauces, vegetables and wet dishes at temperature while plates warm below.
